Kando (kan doh) is a Japanese word that means to be moved, excited, passion - that's how I feel about food and all its possibilities and what I strive to inspire in others. Several years living in Japan, immersed in its amazing food culture has had a profound influence on me.
Since starting my training nearly 20 years ago, I've become even more fascinated by food in its entirety; the place it has in our homes, cultures and bodies. The nutrient quality of our food is vitally important but so is the way it is prepared, who is doing the cooking, how it is presented, how it is received and with whom it is shared.
